Children's Cooking Class
Class 7 – Pie In The Sky / Apple Cranberry Blossoms
1. Instructor demonstrates making pie dough using food processor with volunteer
students participating, must rest in cooler
2. Instructor demonstrates cutting apples for pie filling
3. Instructor demonstrates cooking apple cranberry pie filling for the blossoms
4. Instructor demonstrates rolling pie dough and filling the blossoms, students will
fill their apple blossoms then instructor will bake
5. Instructor demonstrates making vanilla whipped cream with volunteer students
participating (to be utilized for plating)
6. Instructor demonstrates and prepares strawberry coulis (to be utilized for plating)
7. Instructor demonstrates plating the apple blossoms including saucing the plate
and piping whipped cream, each student will have the opportunity to plate their
blosssom
8. Class to enjoy prepared food and participate in kitchen cleanup

About the Chef
A graduate of The Culinary Institute of America Eric has worked in many areas of the hospitality industry including hotels, catering, private schools, and culinary education. He is a ServSafe certified Food Protection Manager and a certified Foodservice Management Professional through the National Restaurant Association.
